Stuffed peppers...
These are so easy and so good!
Ingredients:
4-6 green peppers
1 pound ground turkey (or beef)
1 chopped onion
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon oregano
1/2 teaspoon pepper
1 12 ounce can of tomato sauce
a little water
1/2 cup cooked rice
1 egg
Mix everything together, reserving about 1/4 of the tomato sauce for later. Hollow out the green peppers -- we simply slice off the tops to create a nice opening, then remove the core and seeds, etc. Scoop the meat mixture into the peppers--be generous: fill them up to the top--and place them in a pyrex dish that's big enough to hold them all.
Bake for 40 minutes at 350 degrees. Pull them out after 40 minutes and top with the remaining tomato sauce. Then put back in for another five to 10 minutes (until the sauce has a little time to cook).
Serve with a salad and easy peasey frozen corn. Yum. Honestly, this dinner might cost you $15 to serve four or more people. Love that!
